The yacon root is the edible part of the tuber and is composed mostly of water and fructo-oligosaccharides (carbohydrates metabolized by the digestive system). That means it has a sweet taste but the blood sugar rises due to the type of carbohydrates it contains.
Its hypoglycemic action make it an ideal food for diabetics.
